Practically every flight and ground instructor in the USA owns a copy of the previous edition of FAA's Aviation Instructor's Handbook, published in 1977. It contains all of the information necessary for instructor candidates to pass the FAA Fundamentals of Instructing Knowledge Exam, and it's also an all-around good book on how to teach. Now the FAA has released the first revision of the text in 23 years, with new information for the 21st Century.

Preface: "The Aviation Instructor's Handbook is designed for ground instructors, flight instructors and aviation maintenance instructions. It was developed by the FAA Flight Standards Service, Airman Testing Standards Branch, in cooperation with aviation educators and the aviation industry. The handbook provides the foundation for beginning instructors to understand and apply the fundamentals of instructing. It also provides instructors with up-to-date information on learning and teaching and how to relate this information to the task of conveying aeronautical knowledge and skills to students. Experienced aviation instructors also may find the new and updated information useful for improving their effectiveness in training activities."
